Preparation is what can honestly be sold right now
The boss names are known — eight encounters in The Barrow Deeps, thirteen in Hyjal Summit, and Onyxia — but Blizzard has not published mechanics, lockout timers or loot rules, and the beta tests no raids. That means nobody can coach you on the new encounters — nobody has fought them. What can be taught, and taught well, is everything around the encounters: whether your gear is actually good enough, whether your consumables and profession work are done, what a raid leader will look at when they decide whether to take you, and how the three raid sizes differ in what they demand of an individual.
Ten, twenty and forty are different jobs
In a ten-player raid an individual's mistakes are visible and matter. At forty they are absorbed, and what matters instead is showing up on schedule and not being the person who needs telling twice. Twenty sits between them and is the hardest to prepare for because it demands both. A useful prep session starts by asking which of the three you are aiming at, because the honest advice diverges immediately — and Onyxia's Lair, as the one returning raid, is the one where twenty years of player knowledge is at least partially transferable.
What a session should leave you with
A written gap list. Not reassurance — a list of the slots that are not good enough, the consumables you have not sorted, and the profession work that is outstanding, ordered by how much it matters against a 9 December deadline. That list is then something you can act on yourself or hand to a farming seller. A coach who spends an hour telling you that you are nearly ready has sold you comfort; one who sends you away with six things to fix has sold you the session you paid for.

Frequently asked questions
Can a coach teach me the raid encounters?
Not the new ones yet. The boss names are known, but nobody has fought them: the beta tests no raids. What can be taught is everything around the encounters — gear gaps, consumables, role expectations and raid-leader criteria — and Onyxia, as far as Classic's version carries over.
Which raid should I prepare for?
Decide first, because the advice diverges. Ten-player raids expose individual mistakes, forty-player raids absorb them and reward reliability, and twenty-player sits awkwardly between the two.
Is Onyxia's Lair easier to prepare for?
Partially. It is the one returning raid, so twenty years of Classic player knowledge is at least somewhat transferable — though Blizzard has not confirmed that Forever's version is mechanically identical.
What should I walk away with?
A written gap list ordered by priority against the 9 December deadline. That is the deliverable worth paying for, and it is something you can hand straight to a farming seller.
When should I book?
Early enough to act on the list. A prep session in the first week of December tells you what you should have done in November.
